Baked Eggs and Kale

I threw this recipe together one morning when I fancied a savoury breakfast and wanted to use up some ingredients I had in the fridge. It ended up looking a bit of a mess, but turned out to be absolutely delicious!

This breakfast is well balanced – the protein found in the eggs and the healthy fats from the avocado keep you feeling full and satisfied and the kale and tomatoes add great nutritional value, a great way to start your day!

As I was enjoying it,  I decided next time I would add some crispy bacon to the top! Let me know if you give it a try!


Serves 1

1 tsp coconut oil

2 big handfuls of kale 

200g tinned tomatoes

2 large eggs

1/2 an avocado


1. Heat the coconut oil in a sauce pan

2. Gently sauté the kale for a few minutes until it softens slightly 

3. Pour the tinned tomatoes in the middle of the pan

4. Make tiny wells in the tomatoes and crack the eggs in

5. Leave the eggs to cook through

6. Serve with 1/2 an avocado

7. Enjoy!
