Turmeric Spiced Cauliflower ‘Cous Cous’

This simple Cauliflower Couscous recipe takes no time at all to make but the flavours are just amazing! I am a big fan of making healthier versions of meals I love, and this comforting ‘couscous’ is a great low carb alternative to rice or couscous, that still keeps you feeling satisfied for hours after. This nourishing meal is full of goodness that will make you glow inside and out!

Turmeric is a wonder food – it has so many health benefits so I love including it in my cooking whenever I can. As well as being an anti-inflammatory, turmeric is a strong antioxidant and supports blood sugar balance. Check out my Turmeric Spiced Granola, and my Golden Turmeric Smoothie recipes

I love to drizzle the bowl with tahini and sprinkle some extra pumpkin seeds on the top. It works great as a side dish or as a great addition to a tapas style meal! For non-vegetarians, I served this with chicken breasts as a main course. The favours of the spices, mixed with the sweet raisins reminds me of coronation chicken!

INGREDIENTS

2 tsp Coconut Oil

2 tsp Turmeric Powder

2 tsp Ground cumin

1tbsp Pumpkin Seeds

1 tbsp Sunflower seeds

1 head of Cauliflower

1/2 cup Sweetcorn

2 tbsp Raisins

Optional – Tahini to serve

METHOD

1. Chop the cauliflower head into small trees

2. Put them in a food processor for about 30 seconds until you get a couscous like consistency (You might need so scrape the edges)

3. Heat the coconut oil in a large pan, when it has melted, add in the spices

4. Pour the cauliflower couscous into the pan and stir until it changes colour. (I love the golden tones of the turmeric!)

5. Add in the sweetcorn and heat through.

6. When ready, stir in the raisins and seeds and its ready to serve!

7. Enjoy!
